Usually Mexican restaurants don’t make me think of healthy food. That’s why I was so surprised when I saw Pollo Sinaloense on the menu at El Alcapulco. The platter came out with grilled chicken, red peppers, yellow peppers, asparagus, squash, zuccini, broccoli and onions. It was so delicious! Even before I put shredded cheese and queso on it.. I highly recommend this great dish!
Ramsi’s Cafe on the World is a great place to go if you’re trying to eat vegetables. They have a whole vegan menu, and if you are not vegan, you can easily add meat to any vegetarian dish. The salad that I ordered tasted so much better than the one I posted previously. It had strawberries, apples and toasted almonds with basil balsamic vinaigrette. Maybe basil balsamic vinaigrette would be good on the salad I posted earlier. (Click here to see the previous salad recipe.)
This is a dish from Cheddar Box Cafe in Middletown. With fresh red and yellow bell peppers and asparagus, you get a full serving of vegetables with just a half order of the dish. It’s so tasty!
